My girls are still absolutely crazy about rice, and these days I've been packing a hot thermos with rice dishes to send in my daughter's school lunch every day. I try to mix it up with the spices a little to give her different tastes from around the world. I suppose I'm turning into a gluten free blog, simply because that's all our family eats now. For the most part I don't mind eating gluten free at home. My daughter was getting upset when she would catch me eating something she couldn't have so I just stopped buying it for myself altogether. But we LOVE <a href="http://mixitupcookbook.blogspot.ca/search/label/Indian">Indian food</a> and my favorite part has always been the naan bread. I didn't believe you could make a fluffy, chewy version without gluten. I was SO wrong!<br />
<br />
<b>Gluten free naan bread mix (single use)</b><br />
<br />
1 1/3 cups rice flour<br />
1/3 cup potato starch<br />
1/3 cup tapioca starch<br />
1 tablespoon baking powder<br />
1/2 teaspoon salt<br />
1 teaspoon xanthan gum<br />
<br />
<b>What else you'll need</b><br />
<br />
1 cup plain yogurt<br />
1 tablespoon lemon juice<br />
Fresh cilantro leaves (optional)<br />
<br />
Combine dry mix with yogurt and mix well. It will be crumbly so mush it with your hands like play dough. Add in the lemon juice and mix completely. I also mixed in a handful of fresh cilantro leaves for flavor.<br />
<br />
Divide dough into 8 balls and roll them out on a rice floured surface and place on baking sheets (I put mine on silicone baking mats to prevent sticking as well).<br />

Put in the oven under the broiler for about 5 minutes, until tops begin to brown. Take them out and brush them with melted butter (and sprinkle on a little salt if you're a salt addict like me!)<br />

Our car is dying, our dryer crapped out this weekend, the rain gutters are falling off our roof in a dangerous way, we just had to hire a plumber to unclog a floor drain in our basement, we got our ducts cleaned and we just went on vacation this month. Oh and yes, Christmas shopping...<br />

As I often do in times like this I have myself on a strict no spending policy. I'm eating what I have in the freezer and cupboards and staying away from the stores. But... this is also the time of year I always make my jar mixes for people and I can't make all of them using what I already have here. Or can I?<br />
<br />
This summer I purchased a case of extra large mason jars which are perfect for baking mixes. And we literally have about 50 pounds of oatmeal after a big sale at Costo (my oldest daughter LOVES oatmeal). So I thought what can I do with this? <br />
<br />
<b>Oatmeal bread mix</b><br />
<br />
3 cups flour <br />
3/4 cup quick oats<br />
3 tablespoons sugar<br />
1 1/4 teaspoons salt<br />
<br />
In a separate sachet, add 1 1/2 teaspoons active dry yeast. It's much cheaper to buy in bulk this way. The baggies can be found in the craft section of the dollar store, the small size come 80 in a package for a dollar. <br />

1 1/3 cups warm water<br />
2 tablespoons oil<br />

To make dissolve the yeast in warm water until it's frothy, then add in oil then the mix and stir. Once it's well mixed you can knead it. Then leave it in a large mixing bowl covered with a cloth in a warm place to rise. Because there is no 'warm' place in our house I left it in my oven with the light bulb on to warm it up a bit (<a href="http://mixitupcookbook.blogspot.ca/2013/05/drying-fruits-vegetables-and-herbs-for.html">the way I do when I dry food in there). </a><br />

One the dough has risen (it's at least doubled in size), take it out, knead it again and put it into 2 greased loaf pans. Cover them and let them rise again.<br />

Bake at 350 F until the bread starts to brown on the top and bottom. <br />

1/2 lb (2 cups)fresh green beans cut into 1” pieces (Tip: you could use frozen beans as well)<br />
1 tbsp cooking oil<br />
¼ tsp salt <br />
1 tbsp grated coconut (optional)<br />
10” non-stick skillet<br />

<b>Cooking Directions: (Remember to stop and savor the flavors!)</b><br />

1. Heat oil in pan, sputter mustard seeds<br />
2. Add cumin seeds, asafetida, split black gram lentil and chick peas lentil fry to golden brown <br />
3. Add green beans, salt, turmeric powder and red chili powder<br />
4. Cook covered for 10 mins stirring every 2-3 mins.<br />
5. Remove cover, stir fry on medium heat until moisture evaporates<br />
6. Stir in shredded coconut (optional), remove from fire<br />

Variation: substitute ¼ cup green beans with carrot cut into 1” cubes <br />

I stir fried all the spices in order, then added the green beans. I omitted the red chili powder which I suggest anyone with small children do as well. Use it if you like spicy food!! When I make the recipes from scratch I substitute the chili with paprika to keep the red color/mild pepper flavor. Also if you can't track down asafoetida you can substitute 1/4 teaspoon garlic powder and 1/4 teaspoon onion powder for 1/4 teaspoon asafoetida (I know this doesn't add up, but it works. I use it all the time in my Indian cooking).<br />

This mix fit perfectly into a 2 cup (500 ml) mason jar. I would have done a much prettier job layering it but I had an impatient baby snacking in her high chair and didn't have a lot of time to mess around before she protested her captivity. <br />

These were delicious and a nice change from the usual chocolate chip. You can make them into orange cranberry cookies by using dried orange peel instead of lemon peel and orange juice instead of lemon juice.<br />

On the outside of the jar, tie a small bag of M & M 's with a ribbon. If you are using bulk candies, tie 1/2 cup of M & M's into a baggie. Attach a tag or sticky label with the directions:<br />

1/2 cup butter<br />
2 eggs<br />
1 teaspoon vanilla<br />

Blend wet ingredients and stir in mix. Pour batter into a greased square baking dish. You can top with batter with M & M's before baking if you want them melted into the brownies, or halfway through if you want them more intact.<br />

You can use this as a dry rub too, but it tastes more authentic if you marinade the chicken in yogurt first. Combine the mix and yogurt and stir well, then mix in the chicken. Marinade in the fridge for 8 hours. <br />

The weather this month has been incredible and we've been outside soaking it all up, instead of inside cooking or cleaning or mixing it up for the blog. Who wants to do house work when you could be at the park or picking apples or on a long walk or boating on the lake?<br />

I did manage to force myself inside one day last week and try something new. This meal was perfect for us because we generally eat chicken instead of beef and rice instead of pasta with my husbands gluten free diet. <br />

1 pound diced cooked chicken breast<br />
3 cups (or more) cooked rice<br />
1 cup milk<br />
1/2 can tomato paste<br />
1 cup shredded cheddar cheese<br />

I've started making my 'helper' mixes in a new way. I no longer use powdered milk and water because let's face it- most people, especially parents have at least some form of milk in their fridge, but very few have powdered milk in their cupboards. I also cook the meat, rice/pasta first and then whip up the sauce and add it all together instead of cooking everything in the sauce. This stops everything from sticking to the bottom of the pot while it's cooking and also allows you to add as much rice or pasta as you want to stretch out the meal. I find 'helper' recipes tend to be way too heavy on the meat, and they just don't feed enough people!<br />
<br />
Combine mix with milk and stir well, adding in tomato paste and stirring until it dissolves. Cook on medium heat in a large pot, adding in chicken and rice and stirring until sauce thickens. Add cheese and stir until it melts. <br />

I'm sorry for not posting anything last week but I broke my baby toe! It's been pretty impossible chasing a 1 year old and 4 year old around on one foot! One of the hardest parts of being injured has been getting a nutritious dinner on the table every night, because it's something that has to be done regardless. We have a lot of chicken in our freezer, so I've been relying on many old favorites using chicken breasts. Every morning I get out a frozen portion of chicken to defrost and decide what to make it into. Some of these recipes use raw chicken breasts, others are salads and side dishes that cooked chicken can be added to later. A few are also used on other cuts of chicken or fish, but work just as well on chicken breasts. <br />

In recent months I became addicted to the miracle that is fattoush salad. Sumac is a dark red powder that gives it the sour taste and is absolutely essential. It can be found at any middle eastern grocery store, and recently Bulk Barn started carrying it as well.<br />

Combine mix with juice and oil and shake well. You'll need to chill it in the fridge for a while because at first all of the dry ingredients will float to the top until they are well soaked.<br />
<br />
A good fattoush salad is made with romaine, cucumbers, tomato, onions, peppers and various other vegetables. Toss the salad in the dressing and mix it well.<br />

This salad is famous for the crunchy pita chips inside it and the perfect way to use up stale pitas. Pita bread seems to go stale about an hour after you buy it. Simply dry it out in the oven and then crumble and toss with olive oil.<br />

I usually make a maple garlic salmon but I recently ran out of pure maple syrup and wanted to try something new with what we had. So...<br />

It didn't taste exactly like 'real' fish and chips, but it was very good. The batter tasted somewhat like Fritos because of the corn components, which was very yummy! I'll be making Frito fish again very soon!<br />

I put mine in a large jar so I could stir it by shaking and get the sprinkles evenly distributed. But also this makes a nice gift in a jar. <br />

1 teaspoon vanilla<br />

I would suggest blending the wet ingredients well before adding in the dry mix. I didn't do this, which caused me to overmix, which cause the sprinkles to bleed into the batter and make it look a bit grey.<br />

Combine mix with oil and vinegar and add raw chicken. Some people marinade in bags but I use a glass bowl because it's less wasteful. I let mine sit for about 2 hours in the fridge to really get the flavors in it. <br />

But sometimes in the evenings when I have some scrap of energy left I tinker around in my mix it up kitchen, especially with some 'after the kids are in bed' treats. I've been working on some gluten free baking mixes for my husband and came up with this simple one the other night.<br />
<br />
<b>Gluten Free Brownie Mix</b><br />
<br />
1 cup sugar<br />
1/3 cup rice flour<br />
1/3 cup cocoa<br />
3 tablespoons potato starch<br />
1/4 teaspoon baking powder<br />
1/4 teaspoon salt<br />

When it comes to mass production for gluten free mixes I would suggest making several batches and storing them in bags/containers separately rather than making a big batch to scoop out of. Gluten free recipes are very susceptible to failure if the ingredients aren't properly measured and contents tend to settle when mixed together in a big batch. <br />
<br />
<b>What else you'll need</b><br />
<br />
1/2 cup butter<br />
2 eggs<br />
1 tablespoon vanilla<br />
<br />
Blend butter, eggs and vanilla in a mixing bowl and then stir in mix and stir until smooth. In a greased baking pan bake at 350 degrees Fahrenheit for 20-30 minutes until edges are crispy and center is cooked through. Fully cool before serving (we never follow that and end up with crumbled brownies!)<br />

I bought 10 pounds of pork side ribs from Costco and this mix was just enough to heavily coat them all to perfection. <br />

Our BBQ is an $89 Canadian Tire POS so I knew I couldn't fit all 10 pounds on there for a lengthy rib cooking. Instead I pre-cooked them in a covered turkey pan in the oven (250 degrees for about 3-4 hours) and then finished them off on the grill for about 10 minutes on low.<br />

5 lasagna noodles broken into pieces<br />
3 cups water<br />
1/4 cup tomato paste (about 1/3 of a can)<br />
1 cup shredded mozzarella <br />

Brown beef and drain. In a saucepan combine mix and water and stir well, then add beef and noodles and simmer on medium heat until sauce thickens and noodles are tender. <br />

Stir in mozzarella until it melts, then serve. Top with Parmesan cheese if you like (I don't!). This was delicious and lasagna like and so easy but without any scary chemicals. I loved it!<br />

<b>Cooking Directions: (Remember to stop and savor the flavors!)</b><br />

1. Heat oil in skillet on medium heat, sputter mustard seeds<br />
2. Lower heat, add cumin seeds and asafetida<br />
3. Add onions, stir fry 1 minute on medium heat until brown <br />
4. Add cauliflower, carrots, turmeric powder, red chilli powder, coriander powder and salt <br />
5. Stir and cook covered on low heat for 5-6 min, stirring every 1-2 min so the vegetables absorb the flavors of spices<br />
6. Uncover, stir-fry on medium heat for 5-6 min until moisture evaporates<br />
7. Sprinkle rice flour and stir fry for 3-4 min on medium heat till brown<br />
<br />
Serve hot with rice or Indian bread (naan)<br />

This dish was VERY spicy (my husband's exact words were 'It's burning a hole in my brain'). Authentic Indian food is generally very hot, and as we are a family with wimpy taste buds and small children we need to cook milder foods. The fact that the spices are separated makes this possible because you can choose to omit (or use less of) the red chili powder packet to make it a milder dish.<br />
<br />
I have many Indian friends who have taught me how to cook authentic Indian foods, but I could never get them to turn out as well in mix form. I know now because the spices need to be added in at different times. Making a 'mix' package with separated spices can allow you do save time without sacrificing taste.<br />
<br />
<a href="http://www.fillmyrecipe.com/">FillMyRecipe</a> is a great company because it allows you to try out new recipes once without the commitment of buying several large packets of spices before you know you like the recipe. I plan to try out many more of her products in the future.<br />

I'm burning through bottles of salad dressing faster than I can buy it so I've been making a lot of my own. My old recipe for Italian salad dressing tasted 'too herby' and strong for me so I came up with one that tastes more like the store bought kind.<br />

<b>Zesty Italian Salad Dressing Mix</b><br />

1 teaspoon dried garlic flakes<br />
1 teaspoon dried red bell pepper flakes<br />
1 teaspoon sugar<br />
1 teaspoon salt<br />
1/2 teaspoon dried onion flakes<br />
1/4 teaspoon parsley<br />
1/4 teaspoon xanthan gum<br />
1/4 teaspoon nutritional yeast<br />
<br />
Xanthan gum is a thickener used in commercial dressings and other foods. You can omit it if you don't have any. Nutritional yeast enhances flavor but can also be omitted. <br />

This salad dressing has the same garlicky tang as the store bought dressing without too much overpowering herb taste, but can be made at home using healthier oils for much less money. It was delicious on our nice fresh salads.<br />
