Gluten Free Brownie Mix

I apologize for posting less often these days- it's a combination of summer being too much fun and having a 1 year old that climbs everything combined with an almost 4 year old that is constantly demanding me to PAY ATTENTION to everything she says and does. It's hard enough to cook meals these days let alone create them!

But sometimes in the evenings when I have some scrap of energy left I tinker around in my mix it up kitchen, especially with some 'after the kids are in bed' treats. I've been working on some gluten free baking mixes for my husband and came up with this simple one the other night.

Gluten Free Brownie Mix

1 cup sugar
1/3 cup rice flour
1/3 cup cocoa
3 tablespoons potato starch
1/4 teaspoon baking powder
1/4 teaspoon salt



When it comes to mass production for gluten free mixes I would suggest making several batches and storing them in bags/containers separately rather than making a big batch to scoop out of. Gluten free recipes are very susceptible to failure if the ingredients aren't properly measured and contents tend to settle when mixed together in a big batch.

What else you'll need

1/2 cup butter
2 eggs
1 tablespoon vanilla

Blend butter, eggs and vanilla in a mixing bowl and then stir in mix and stir until smooth. In a greased baking pan bake at 350 degrees Fahrenheit for 20-30 minutes until edges are crispy and center is cooked through. Fully cool before serving (we never follow that and end up with crumbled brownies!)



These were delicious and disappeared fast. They are very inexpensive to make, especially compared to those overpriced gluten free mixes you can buy. These are certainly on the list of favorites!

  1. I just found this mix, which is awesome, because I have a friend who eats gluten free! Couple of questions. The butter, should it be room temp? Also what size pan do you use? Thanks!

  2. Yes, room temperature butter. And a square baking pan, I don't know the measurements exactly.
