Guest post from FillMyRecipe: Vegetable Rice (Pulav) seasoning mix



My girls are still absolutely crazy about rice, and these days I've been packing a hot thermos with rice dishes to send in my daughter's school lunch every day. I try to mix it up with the spices a little to give her different tastes from around the world. Today with the help of FillMyRecipe I made her a little taste of India for her lunch tomorrow using the spices for vegetable rice (pulav).

Her pre-packaged seasoning mix comes with all spices needs to make this delicious dish.



Pulav seasoning mix (single use)

½ tsp cumin seeds
2 pods green cardamom
1 pod black cardamom
1 bay leaf
1” stick cinnamon
¼ tsp clove
Pinch of saffron

What else you'll need

1 cup chopped vegetables (carrots, peas, green beans)
2 tsp oil
1/2 tsp salt
1/2 cup long-grained rice or basmati rice


To garnish

2 tsp oil,
1 tbsp chopped cashews
1 tbsp raisins
1/2 cup white onions chopped thin & long (optional)

Cooking Directions

Remove spices marked with * before serving

1. Heat oil in skillet on medium heat, lightly brown cumin seeds, green cardamom*, black cardamom*, bay leaf*, cinnamon*, clove* for 20 seconds.


2. Add chopped vegetables, stir fry 1 min


3. Add washed and strained rice, stir fry 1 min


4. Add water, saffron and salt, cook covered until rice is ready (Note: you could cook mixture in a rice cooker if you like)



Optional:

5. Garnish: fry cashews, onions and raisins in 2 tsp oil for 1 min until golden brown. Add garnish to cooked rice and vegetables, mix and serve hot



The rice was perfect, fragrant and delicious (I managed to sneak in a few bites while packing her lunch). Definitely another hit from FillMyRecipe!

Curried Cauliflower and Carrots Spice Mix (single use)

Fresh cauliflower and carrots are a delicacy flavored with genuine Indian spices. This popular recipe of North India is relished as a side dish with rice or Indian bread.

I learned to cook from my mother, who treated cooking as an art. Married to a fighter pilot in the Indian Air Force, my mother was used to throwing elaborate parties at our house and would labor lovingly over the hot stove in 90 degree weather, whipping up exotic dishes, and relishing every moment of her cooking experience! No wonder I grew up appreciating the Indian cooking process wherein one introduces each spice at specific stages during the cooking process, releasing the aroma of each spice individually…. Ummmm….heavenly!

Here is the recipe for one such dish – Curried Cauliflower and Carrots – an all time favorite of many Indians! You can acquire pre-measured, individually packed spices for this recipe and others from my growing list of recipe mixes from www.fillmyrecipe.com – a web store that sells Ethnic Spicery spice mixes for pre-determined or custom Indian recipes. So here is a simple recipe for Curried Cauliflower and Carrots. Enjoy your cooking experience!

Recipe pack contains:



½ tsp mustard seeds
½ tsp cumin seeds
¼ tsp asafetida
¼ tsp turmeric powder
¼ tsp red chilli powder
¼ tsp coriander powder
½ tsp rice flour

What else you'll need:

½ medium size onion cut into small pieces
½ lb (2 cups) cauliflower broken into small florets
1 medium carrot cut into 1” long and 1” wide pieces
1 tbsp cooking oil
¼ tsp salt
10” non-stick skillet

Serves 2



Cooking Directions: (Remember to stop and savor the flavors!)

1. Heat oil in skillet on medium heat, sputter mustard seeds
2. Lower heat, add cumin seeds and asafetida
3. Add onions, stir fry 1 minute on medium heat until brown
4. Add cauliflower, carrots, turmeric powder, red chilli powder, coriander powder and salt
5. Stir and cook covered on low heat for 5-6 min, stirring every 1-2 min so the vegetables absorb the flavors of spices
6. Uncover, stir-fry on medium heat for 5-6 min until moisture evaporates
7. Sprinkle rice flour and stir fry for 3-4 min on medium heat till brown

Serve hot with rice or Indian bread (naan)



I received a sample of this dish from FillMyRecipe this week and tested it out in the Mix It Up kitchen.

I pre-chopped and assembled all my ingredients in advance, a must for Indian cooking:

This dish was VERY spicy (my husband's exact words were 'It's burning a hole in my brain'). Authentic Indian food is generally very hot, and as we are a family with wimpy taste buds and small children we need to cook milder foods. The fact that the spices are separated makes this possible because you can choose to omit (or use less of) the red chili powder packet to make it a milder dish.

I have many Indian friends who have taught me how to cook authentic Indian foods, but I could never get them to turn out as well in mix form. I know now because the spices need to be added in at different times. Making a 'mix' package with separated spices can allow you do save time without sacrificing taste.

Creamy sun dried tomato and basil penne mix



I've been on a big sun dried tomato kick lately. I used to think I hated them, but I think it was just some gross chemical they cure them with. Because I bought a big flat of gorgeous tomatoes at Costco recently and made my own sun dried tomatoes with them in the oven. They are amazing!

This pasta is another Sidekicks copycat...

Sun dried tomato and basil penne mix

1/4 cup sun dried tomatoes, chopped
2 tablespoons powdered milk
1 tablespoon corn starch
1 teaspoon sugar
1 teaspoon basil
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon onion powder



What else you'll need

2 cups water
1 cup uncooked penne or other pasta
2 tablespoons butter

In a small saucepan combine mix with cold water and stir well then add pasta and butter.



Simmer on medium heat until pasta is tender and sauce thickens.



It's supposed to be a side dish but I ate the whole batch as a main course instead, it was that good!

Fettuccine Alfredo Mix


First off, I am starting to add pin buttons to the bottom of my posts to make it easier for everyone to pin my recipes onto pinterest. I'm slowly working my way back through old recipes.

Also... wow is it ever cold. Like the other day I tried to take out the garbage and my back door was frozen shut. As a result I'm trying to cook with whatever I have in the house so I don't have to leave. Today I noticed we have a lot of pasta. So...

Fettuccine Alfredo Mix (single use)

2 tablespoons powdered milk
1 tablespoon corn starch
1 1/2 teaspoons parmesan cheese
1 teaspoon sugar
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
pinch pepper


What else you'll need

1 cup uncooked pasta noodles (fettuccine is hard to measure in a cup so just grab a fistful about a quarter in diameter).
2 cups cold water
2 tablespoon butter

Combine mix, butter, noodles and water in a small saucepan and stir.


Simmer on medium heat until noodles are tender and sauce thickens.


Serve as a main dish or side. This is a Lipton's sidekick copycat recipe so it's lower in fat than regular alfredo but still very creamy.

Baba Ghanoush Seasoning Mix


I love Lebanese food! We have a little take out place on the corner that I go to way more often than I should. I think my second daughter was made up entirely of their food as I craved it all the time when I was pregnant with her. I get it whenever I want a fast food fix but don't want to eat garbage, but it gets pretty expensive so I learned how to make shawarma and falafel at home, and then recently I came up with this as well...

Baba Ghanoush Seasoning Mix

1 teaspoon dried parsley flakes
1/2 teaspoon dried garlic flakes
1/4 teaspoon salt
1/8 teaspoon pepper
pinch cumin
pinch cayenne


What else you'll need

1 eggplant
1/4 cup tahini
1/4 cup lemon juice

For garnish

Olive oil
More dried parsley flakes

Roast the eggplant in the oven until tender and then scoop out the cooked insides into a bowl and pour seasonings on top.




Add tahini and lemon and blend mixture until smooth. Drizzle with olive oil and spinkle some parsley flakes on top for garnish. Serve as a dip with veggies or pita or use as a spread for shawarma, falafel or other sandwiches.

Vegetable Soup Mix

Baby it's cold outside! The snow is here for the season now and that means sledding, constant runny noses and SOUP! Some days I make elaborate homemade soups that can't compare with anything else. But other days I'm sick, or I want to spend my time sledding with my oldest daughter and then whip something up quickly as fast as I can. Store bought soups and soup mixes have such a gross aftertaste, so that's why I need to mix it up...

Vegetable Soup Mix (single use)

1 vegetable bouillon cube (or 1 tablespoon bouillon mix)
1/4 cup dehydrated vegetable flakes
1/4 cup soup noodles (I used alphabet)


Yep, that's it. 3 ingredients. So easy.

What else you'll need

1 tablespoon tomato paste
4 cups water

Combine mix, tomato paste and water in a small saucepan and simmer, stirring well to dissolve the bouillon and tomato paste first.


Cover and simmer until noodles and vegetables are tender. It's the best soup you'll eat for so little work. I ate the whole pot in one sitting.

Eggplant/Chicken Parmesan Mix


I'm due in one month from today! While I totally expect to go overdue like the last time I've been mixing it up like crazy these past weeks to make sure I have a surplus of recipes to post once the baby is born. I remember what it's like- when even EATING food is sometimes impossible never mind concocting and photographing a new recipe! We hope this baby won't have colic like our first did but we're not banking on anything!

Last week after the delicious vegetarian buffet at my sister's wedding I was craving eggplant, so I decided to create a mix for...

Eggplant (or) Chicken Parmesan Mix

1/2 cup bread crumbs
1/2 cup parmesan cheese
1 teaspoon oregano
1 teaspoon basil
1 teaspoon garlic powder
1 teaspoon sea salt
1/2 teaspoon pepper


What else you'll need

2 large eggplants OR
4 large boneless skinless chicken breasts
1 jar of pasta sauce or tomatoes
8 slices of mozzarella cheese
oil for frying

Prepare the eggplant or chicken:

For eggplant- cut into large slices



For chicken- butterfly each breast into two thinner pieces and pound as thin as possible with a meat cleaver.

Dip eggplant or chicken in mix and fry in oil until golden brown. Spread a layer of pasta sauce on the bottom of a glass baking pan, place breaded eggplant/chicken on top, top each piece with mozzarella. Continue layering sauce, pieces and cheese until all is used up.




Bake in the oven at 350 F until eggplant/chicken topping is slightly crispy (about 1 hour)


Let cool for 15 minutes before slicing and serving.


I thought it was delicious! It totally took care of my eggplant craving! My husband said it was delicious except for one thing- it didn't have any meat! But that's ok, because next time I'm making it using chicken. It's a great mix to keep around when you're omnivores like we are because it can serve double duty. You get two different meals in one.

Masoor Daal Mix




My daughter has this weird obsession with rice. She loves it. Every time she sees me going into the kitchen to cook dinner she yells 'A rice! A rice!' in hopes that it's what I'm making. In the past few weeks I've been making us a pot of basmati rice every day at lunch time, but wanting her to eat something a little more substantial than that I've been topping it with a pouch of microwaveable daal. That baby loves her curries, but I realized for a daily habit that $2.69 a pouch was a little expensive for something that can be made for pennies. So inspiration hit....

Masoor Daal Mix (single use- makes enough for 2 large servings)

1/2 cup red lentils
1 1/2 teaspoons dried onion flakes
1/2 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon coriander
1/2 teaspoon tumeric
1/4 teaspoon dried garlic flakes
1/8 teaspoon cardamom powder
1/8 teaspoon cayenne
1/8 teaspoon cinnamon




What else you'll need

2 cups water
1 tablespoon oil
1 tablespoon tomato paste

I use tomato paste in a tube which is double strength so I used only half a tablespoon. The kind in a tube is great for when you only need a little bit and don't want to open a whole can.

Combined the mix, water, oil and tomato paste in a small sauce pan and stir. Simmer the mixture for about 20 minutes until lentils are tender and mixture thickens. Serve with basmati rice.





My daughter and I both gobbled it up. I will be making this again soon! I might even experiment with a microwavable version in the near future.
